Baked Ziti by Chris A.
2 Jars Spaghetti Sauce
1 lb Ziti(or Rigatoni or Penne)
1 lb Ricotta Cheese
1 Egg
1 tsp Oregano
1 tsp Parsley
1/2 to 1 lb Ground Beef
Cook pasta in water about half way so that it's still hard. Drain and mix with a little of the sauce.
Mix Ricotta, Egg and Spices and cooked Ground Beef and add to pasta. Coat bottom of 9x13 baking dish with Spaghetti Sauce, add mixture and put rest of sauce on top.
Bake covered at 350 degrees for half an hour. You can top with some fresh Parmesan.

Aunt Mary's Salsa
4lbs Tomatoes
1 Bunch Fresh Cilantro
1-4 Sereno Peppers (you decide....I use 2)
2 Limes
1 Bunch Green Onions
1 TBS Minced Garlic
1 1/2 TBS Mexican Oregano
Cumin to Taste
Salt and Pepper to Taste
1. In Cuisinart or Blender chop tomatoes&set aside. I like mine finely chopped.
2. Juice Limes, take ends off Green Onions, with a spoon take seeds and centers out of peppers(be careful...your fingers will taste like peppers!
3. Place Cilantro, Peppers,Onions and Garlic in Cuisinart or Blender. Blend to a paste and add to tomato mixture.
4. Add Lime Juice and seasonings to taste. Place in fridge until color returns to whole mixture
I make this 'loosely' based on the recipe. Mary adds way more peppers!

Brazilian Lemon (lime) ade
2 Limes
1/2 C.Sugar
3 TBS Sweetened Condensed Milk
Ice
1. Wash limes, cut off ends and slice into 8 wedges each.
Place limes in blender with sugar and water.
2. Blend then strain through a fine mesh strainer.
3. Place the liquid back into blender with milk and ice.
Blend.
